What do you do with your leftover chili?  I always make chili cheese fries.  They are definitely a guilty pleasure of mine.

They are so easy and delicious too.

Depending on how much time you have, chop your potatoes into sticks and soak in cold water for a couple hours.  Dry them, and fry them.  Then fry them again,  Then fry them again.  Thrice fried fries are the best.  And if you have it, use duck fat.

If you don’t have that much time, get the store bought fries or tater tots out of your freezer and bake them.

Get your leftover chili and cover the hot fries.  Put them back into the oven and heat the the chili.

Get your favorite peppers and cheese, generously covering the chili.  Put it back into the oven to melt the cheese.

I then cover mine in a homemade yogurt (to mellow out the spice) ranch, using lots of dill, garlic, and lemon or lime.
