Do you like Rocky Road ice cream?  Then you are going to love Rocky Road candy.  It’s incredibly easy to make which makes it all the better.

It needs things that are soft, crunchy, creamy, and flavorful.  Thus the marshmallows, nuts, and chocolate.

For mine, I took large store bought marshmallows and halved and quartered them turning them into eight little pieces each.  I got dark chocolate covered honeycomb and chopped it into smaller pieces as well.  I mixed this all together with cinnamon roasted almonds to add some nice flavor and make me feel a little better about eating it.

Take your preferred chocolate, I used 85% dark, melt it down, and temper it.  Poor it all over the other mixed ingredients and ensure that every piece is covered with chocolate.

Line a pan with wax paper, poor the mixture into the pan and level it out.  Set in the fridge to set up.

When you are ready to eat it, cut and serve.
